Tonight I made baked shrimp with a side of broccolini. I had never had broccolini before, so I was anxious to try it! If you love steamed vegetables, you’ll love this one!
In a bowl, I mixed 3 tablespoons olive oil, 1 tablespoon lemon zest, 1 tablespoon parsley, 1 tablespoon soy sauce, and lemon juice from 1 lemon. I then added the shrimp and let it soak in the marinade for about 45 minutes. Set the oven to 450 degrees and bake for 8-10 minutes and voilà! For the broccolini, I brought 8 cups of water to a boil then added the broccolini and let it cook for 2 1/2 minutes. I then spread it across the pan that I had cooked the shrimp on (the leftover sauce added some flavor) and let it bake for about 5 minutes.
