All Things Purely Elizabeth

Happy Sunday! I’m so excited about this post because I’ve been on a yogurt and granola kick recently. I’ve always been a huge fan of granola, but as I became more health conscious over the years, I started to realize just how unhealthy it can be. Now I’m not sure about y’all, but much of the granola I grew up eating and loving was actually full of added sugars and too much fat. So you can imagine my excitement when…

Curried Quinoa and Peas with Cashews, Mango, and Grilled Chicken

The name says it all. This has been one of the best meals I’ve made yet! The curry powder gave the meal a kick, while the fresh mango and peas added the perfect amount of sweet. The original recipe doesn’t call for grilled chicken, but I added it anyway to make the meal more filling. Top it with chopped cashews and you have a delicious and nutritious dinner! As an addition, I’ve written below seven benefits of quinoa and why you should try incorporating it…

No Bake Sweet Treats

If you know me, you know I have the biggest sweet tooth out of anyone I know. And if you really know me, you know that cookies, no matter what form they come in (no bake, baked, raw cookie dough), are my thing. Pesto Zucchini Noodles with Chicken

Tonight, I decided to make pesto zucchini noodles with chicken. I know it’s not the prettiest meal I’ve ever made…but hey, it was my first time so cut me some slack! Zucchini noodles, or “zoodles”, as people like to call them, are a great substitute to regular pasta noodles. They are low-carb, super low in calories, and great for your heart.  And by topping it with grilled chicken, you’re getting your serving of protein! It’s always fun trying new recipes,…

Stuffed Bell Peppers

Recipe from honeybeehomemaker Stuffed bell peppers have always been one of my favorite dishes. One of the great things about this meal is you can get really creative with what you stuff the peppers with. This time, I used ground turkey with taco seasoning, rice, tomatoes, shredded cheese, and sauteed onions. I must say, it was a huge hit with the fam! And not to mention, this meal is HEALTHY. I’m already looking forward to the next time I make them.…

Honey Cajun Shrimp

Recipe from natashaskitchen.com  I’ve always been into cooking, but I made it one of my New Years resolutions to be more creative in the kitchen and venture off from my normal everyday meals. This time, I made Honey Cajun Shrimp with Spanish rice and a simple, but still tasty, side salad. It’s always funny to me when people are shocked that you can make delicious meals while still keeping them healthy and nutritious! XO, Kenz…

Baked Shrimp and Broccolini

Tonight I made baked shrimp with a side of broccolini. I had never had broccolini before, so I was anxious to try it! If you love steamed vegetables, you’ll love this one! In a bowl, I mixed 3 tablespoons olive oil, 1 tablespoon lemon zest, 1 tablespoon parsley, 1 tablespoon soy sauce, and lemon juice from 1 lemon. I then added the shrimp and let it soak in the marinade for about 45 minutes. Set the oven to 450 degrees…
